ÆBLESKIVER

Best described as a spherical pancake that is fluffy and light, æbleskiver is traditionally served as a dessert in Denmark during the holiday season. “Æbleskiver” translates to “apple slice,” which at one point was an ingredient cooked into the center of the ball. Today, æbleskiver is prepared without the apple slice and served with strawberry jam and powdered sugar. 

The perfectly round shape of æbleskiver is created with a specially designed cast-iron pan that is dotted with divots. Once each divot is filled with batter, the ball slowly begins to take shape with a series of quarter turns, eventually creating a round, fluffy ball.
